RUHANA EBRAHIM'S RECIPES

INGREDIENTS

Ingredients
Base-
2 cups self raising flour
1 teaspoon ground green chillies
Pinch white pepper
1 cup greek yoghurt

Steak-
2 tablespoon oil
500g steak strips
1 teaspoon red ginger garlic masala
1 teaspoon salt
1 teaspoon chilli powder
1 teaspoon dhana Jeeru (Cumin) powder
Pinch tumeric powder
1 teaspoon mustard powder
1 tablespoon brown vinegar
1 tablespoon mustard sauce
1 sachet tomato paste
1⁄4 cup Bbq sauce

Pizza sauce-
1⁄2 onion sliced
2 large tomatoes liquidized
1 teaspoon chilli powder
1⁄2 teaspoon salt
1⁄2 teaspoon dhana Jeeru (Cumin) powder
1⁄4 teaspoon turmeric

Also needed:
1⁄2 green pepper diced
1⁄2 onion diced
Sliced mushrooms
Grated mozzarella cheese
Grated gouda cheese
Dried mixed herbs


METHOD

Base-
Add green chillies and pepper to flour. Then mix in yoghurt and bind by hand. Divide dough in two. Grease hands with oil and smoothen into 2 balls. Roll out on floured surface and poke random holes. Bake at 180 deg C for 10-15 minutues until base has cooked and fluffed up. Leave aside to cool.

Mushrooms-
Heat 1 tablespoon butter in a pan, then add mushrooms and dash of lemon juice. Add a pinch of salt and 1 teaspoon garlic. Saute until liquid releases. Pour out water. Saute for few seconds again and leave aside.

Steak-
Heat oil, add masala and spices and braise till fragrant. Add steak, mustard and vinegar and coat well.
Cook halfway, then add tomato paste and sauce. Cook till tender (adding water if needed) and thick gravy forms.

Pizza Sauce-
Braise onion in oil till golden. Add tomatoes and spices. Cook till reduced and thickened.

Assembly-
Spoon pizza sauce onto bases. Spread mushrooms, then steak, then sprinkle mozzarella, then gouda. Add on diced onions and peppers and a light sprinkle of herbs.
Place in oven for further 5-10 minutes to melt cheese and crispen and brown base.
