For the cake :
Use your favorite tried & tested vanilla cake recipe. Bake as for cupcake.

Jelly:
1 - 2 boxes jelly flavor of your choice.
Prepare as per box instruction. You may add more color if you like.. Cool slightly dip cooled cupcakes into jelly roll in coconut.

INFO & TIPS

You may sandwich cakes with whipped cream I didn't left them plain.
