INGREDIENTS
1 liter full cream milk170g dessert cream (I used Rainbow)¼ cup sugar 1 ½ - 2 teaspoon falooda (agar agar (falooda powder)) powder Rose syrup (to taste)½ - 1 teaspoon cardamom powder
METHOD
1. Pour milk, cream and sugar in a deep pot and whisk until almost to a boil.2. Then add in syrup (till nice taste and color reached) and cardamom.3. Add in agar agar (falooda powder) powder and whisk in.4. Bring the liquid to a gentle boil, whisking all the while, this helps create the “frothy” finish when set.5. Make sure to allow the milk to boil as this activates the agar agar (falooda powder) powder.6. Pour into a glass serving dish/individual glasses or bowls.7. Allow to set 2-3 hours in the fridge. 8. Decorate as desired. (Either with additional dessert cream and almond slivers).
INFO & TIPS
Note:
If you prefer a firm falooda/ghas, then use 2 tsp agar-agar.
If you like a softer set falooda/Ghas, then use 1 ½ tsp agar-agar.
Make sure you're using fresh agar agar, as this affects the setting of the falooda/ghas. If not sure the strength of the the agar-agar, test by placing in a shot glass and see if it sets. If it does not, add a little more falooda powder into the mixture in the pot and reboil. The heat activates it to set. Then place in fridge to set.
