Aamli Chutney (savoury dip)

2 cloves garlic
6 red chillies
¼ cup white vinegar
1 packet Red aamli
Jeeru (Cumin) seeds
Tomato sauce/ apricot jam (to taste)
Soak aamli in vinegar and little hot water.
Make juice and strain.
Grind chillies, garlic and aamli juice together.
Strain seeds out .
Temper in oil, mustard seeds, Jeeru (Cumin) seeds and curry leaves.
When seeds start to "pop" remove from heat and pour over sauce.
Add salt as needed.
Add tomato sauce or jam to add some texture and sweetness and lessen heat.
