RECIPE
Use 1 kg Chicken or Mutton or Beef Kabaab ready mix
Mould into small ping ball size balls
Lightly fry the meat balls
Keep aside
Boil 1 ½ cups basmati or any rice with salt and ½ teaspoon tumeric
Wash drain keep aside
Braise any stir fry veg about ½ cup in 3 tablespoon butter or ghee (Clarified butter)
When soft add to the rice above mix well
Fry 3 potatoes cut in fat wedges
Make tomato chutney
With
2-3 tablespoon oil and 1 tablespoon ghee (Clarified butter)
Add few curry leaves
2 slit green chilli
1 small sliced or chopped onion
½ teaspoon mustard seeds
½ teaspoon whole Jeeru (Cumin)
Add 2 garlic sliced ..optional
Braise
Now add 4-5 medium tomatoes
Grate it or puree it without the skin
Add 1 teaspoon chilli powder
1 teaspoon durbs masala or kashmiri masala
Add 1 teaspoon salt
Add ¼ teaspoon sugar
Braise cook and keep aside
Garnish with green dhania (coriander)
Layer half rice in a casserole
Add all the cooked chutney
Place kabaabs on top
Place potatoes
Lastly
Place the rest of the rice on top
Garnish again green dhania (coriander) optional
Saffron sprinkle optional
Cover casserole in foil
Bake at 170 * +- 1 hour
