2 cups self-raising flour
1 large onion, finely chopped
1 teaspoon fresh ground green chillies
A handful of fresh coriander, finely chopped
A handful of fresh chives, finely chopped
1 410g can cream style sweetcorn
¼ teaspoon salt
¼ teaspoon white pepper
¼ teaspoon paprika
Oil for frying (Olive, Sunflower, Canola or Coconut)
1. Heat a teaspoon of oil at a time to fry crumpets.
2. Combine the ingredients to make a batter.
3. Using a ladle, gently drop spoonfuls into the pan.
4. Fry till golden one side, then flip over & fry the other side.
