Caramel Date Pecan Loaf Cake

Ingredients:2 ¼ cups flour,2 teaspoon baking powder,½ teaspoon bicarbonate of soda,¼ teaspoon salt,½ teaspoon cinnamon powder,½ teaspoon mixed spice powder,1 cup brown sugar,1 egg,1 cup buttermilk,3 tablespoon butter (melted),1 cup chopped pecan nuts,1 cup chopped dates.
Sauce:½ - 1 tin caramel treat125ml fresh cream
Garnish:Chopped pistachiosChopped datesChopped pecan nuts
METHOD1. Sift the dry ingredients in a large dish.2. Add in sugar.3. Separately, beat the egg, buttermilk and melted butter.4. Pour the wet ingredients into dry, and beat well.5. Add in the pecan nuts and dates.6. Pour into a large greased loaf pan.7. Bake at 180 °C for 35-45 minutes.8. Mix the caramel treat with cream and heat together on the stove.9. Pour the sauce whilst hot over the loaf cake to soak in.10. Sprinkle pecan nuts, dates and pistachios over.#mamataughtmewellrecipes
