RUHANA EBRAHIM'S RECIPES

INGREDIENTS

Ingredients:
2 ¼ Cups Cake Flour,
2 teaspoon Baking Powder,
½ teaspoon Bicarb,
¼ teaspoon Salt,
½ teaspoon Cinnamon Powder,
½ teaspoon Mixed Spice,
1 Cup Brown Sugar,
1 Egg,
1 Cup Buttermilk,
3 tablespoon Butter (melted),
1 Cup Chopped Pecan Nuts,
1 Cup Chopped Dates.

Sauce:
1⁄2 - 1 tin caramel treat
125ml fresh cream

Garnish:
Chopped pistachios
Chopped dates
Chopped pecan nuts

METHOD

Beat Egg, Buttermilk and Melted Butter.
Sift dry ingredients, add Sugar.
Pour in wet ingredients and mix well.
Add Pecan Nuts and Dates.
Pour into greased loaf pan.
Bake at 180 °C for 30-40 minutes.
Mix Caramel Treat with cream and heat on stove.
Pour sauce whilst hot over hot loaf to soak in.
Sprinkle Pecan nuts, dates and pistachios over.
