INGREDIENTS
125g butter
2 tablespoon oil
1 egg
2 tablespoon castor sugar
1 teaspoon vanilla or almond essence
2 cups cake flour
2 teaspoon baking powder
smooth apricot jam
METHOD
Grease a small swiss roll pan. Cream butter & sugar.Add oil, egg & flavoring & beat well. Add sifted flour & mix to a soft dough. Divide dough in half. Press one portion of dough into prepared pan. Chill the other portion.Spread enough jam on dough in pan. Sprinkle a thin layer of coconut over the jam. Grate chilled dough over the jam. Bake 12-15 minutes @ 180*C. Sift icing sugar over as soon as it comes out of the oven. Leave to cool in pan then cut into squares.
