RUHANA EBRAHIM'S RECIPES

INGREDIENTS

Ingredients:
400g roll today puff pastry
Flour
3 large potatoes
3 tablespoon oil
1⁄2 teaspoon kulunji seeds
1⁄2 teaspoon mustard seeds
1⁄2 teaspoon Jeeru (Cumin) seeds
3 curry leaves
1⁄2 tablespoon green masala
1 teaspoon crushed garlic
1⁄2 teaspoon salt
1⁄2 teaspoon turmeric
1 teaspoon dhana Jeeru (Cumin) powder
Chopped dhania (coriander)
Grated gouda cheese


METHOD

Heat oil with Jeeru (Cumin), kulunji, curry leaves and mustard seeds.
Add garlic, spices and chillies.
Add potatoes and toss well.
Cook till done, adding little water if needed.
Crush potatoes with back of spoon.
Mix in chopped dhania (coriander).
Remove plastic from pastry.
Cut into 8 even pieces.
Flour surface and roll into thin circles.
Heat tawa on med-low heat.
Place one circle on tawa.
Sprinkle cheese, spoon on potato, sprinkle more cheese and cover with another circle.
Cook pastry till done and crispy, then flip over and cook other side.
Serve hot with chutney.
