90 g butter or marg125 ml sugar1 Egg1 teaspoon vanilla essence1 teaspoon baking powder+-1 & ½ cup flour ( I sometimes use 2 depending on the texture The diyght must be soft not too sticky Beat butter and sugar well add the egg and vanilla essenceGrease a casserole Flatten the doughBake for 10 minutes at 180*removeToppingWhip up ½ cup apricot jamSmear over the baked doughSeperately beat 2 eggs with ¼ cup sugar add 1 teaspoon vanillaBeat well then gradually add +-1 & ½ cup dessicated coconut (Can add less) to the egg mixtureIt must not be too wetSo u can sprinkle over the jamIt will look peaky..Sprinkle 100's & 1000's OverPut back in oven bake 15-20 minutes for coconut to change a creamy gold colour.Leave to cool slightlyCut in blocks Keep in air tight containerand.B: you can also cut dough in rounds place in patty pansDo the usual as above..Enjoy☺

boil 1/4 cup chopped dates with 4 Tblsp sugar and 1/4 cup water together and make paste to smear on dough instead of jam
