RECIPE

Brazilian Chicken Rice Soup

Ingredients:
3 large chicken fillets (cubed)
oil as needed
1 tablespoon crushed garlic
1 teaspoon ground green chillies
1 teaspoon salt
1⁄2 teaspoon white pepper
1 tablespoon lemon juice
1 large onion (sliced)
1.5 liters water
2 tablespoon Golden spices's chicken stock powder (optional)
2 carrots (chopped)
1⁄2 - 1 cup frozen peas
(2 celery stalks -optional)
1⁄4 uncooked basmati rice
2 tablespoon fresh parsley (chopped)
1 teaspoon freshly ground black pepper
1 Packet Knorr thick veg soup

Method
Heat oil in soup pot.
Add chicken, spices, garlic, chillies and lemon and cook till just done.
Remove chicken and leave aside.
Add onion and saute till lightly golden.
Add carrots, peas, chicken and rice and stir well.
Add 1 liter water with chicken stock and boil till rice has cooked through.
Add remainder water, chicken and packet veg soup and bring to boil.
Garnish with chopped parsley.
