Brazilian Chicken Rice SoupA.k.aCanja de Galinha

Ingredients:3 large chicken fillets (cubed)Oil (as needed)1 tablespoon ground garlic paste1 teaspoon ground green chillies1 teaspoon salt½ teaspoon white pepper1 tablespoon lemon juice1 large onion (sliced)1.5 litres water2 tablespoon Golden spices's chicken stock powder (optional)2 carrots (chopped)½ - 1 cup frozen peas(2 celery stalks -optional)¼ uncooked basmati rice2 tablespoon fresh parsley (chopped)1 teaspoon freshly ground black pepper1 Packet Knorr thick veg soup
Method:1. Heat oil in soup pot.2. Add chicken, spices, garlic, chillies and lemon and cook till just done.3. Remove chicken and leave aside.4. Add onion and saute till lightly golden.5. Add carrots, peas, chicken and rice and stir well.6. Add 1 liter water with chicken stock and boil till rice has cooked through.6. Add remainder water, chicken and packet veg soup and bring to boil.7. Garnish with chopped parsley.
