3 med sized orange flesh sweet potatoes½ punnet button mushrooms (sliced)½ tray baby corn (sliced in halves)Oil1 teaspoon crushed garlicPinch chilli powderVeggie spiceSalt and pepperFeta cheese (crumbled)
Slightly slit sweet potatoes lengthwise.
Place in a pot with little water and steam till tender.
When done, place on oven tray.
Split the sweet potatoes open. Sprinkle some salt.
In a pan, drizzle some oil.
Add mushrooms and corn, spices and garlic and cook till done.
Stuff into sweet potatoes. Crumble feta over and charr under hot oven grill.

Didnt have baby corn on hand as i usually use, so used less than half cup frozen corn
