INGREDIENTS
125g butter
125ml castor sugar
1 cup sifted cake flour
1 cup cornflakes (lightly crushed)
15ml cocoa powder
5ml peppermint essence
5ml baking powder
1 cup coconut
ICING:
¾ cup icing sugar
60g butter
1 ml peppermint essence
2 small peppermint crisp bars
METHOD
Cream butter & sugar. Beat in essence,
flour, coconut, cocoa & baking powder.
Stir in cornflakes. Press dough into a
greased small swiss roll pan. Bake 15-
20 minutes. Leave to cool.
Cream butter & add icing gradually. Add
essence & beat well.
Spread icing over & sprinkle grated
peppermint crisp over. Cut into bars.
