INGREDIENTS
250g butter or margarine2 cups castor sugar(I reduced to about 1 ¾ cup sugar)4 large eggs10ml vanilla essence4 cups flour4 type baking powder2 cups milk2 teaspoon grated lemon rind
METHOD
Grease your pan wellPreheat oven to 200°C than before you put your cake into the oven reduce temperature to 160°C this ensures light baking of the cake Beat butter & sugar until light & creamy. Add in eggs on @ time beating well after each addition. Add in vanilla ess grated lemon rind.Than add the flour milk alternating with the flour & milk end with flour.Beat until well blended.Baking time +- 45 minutes to an hourSee above oven temperature settingThis cakes yields 3 madeira loaf pans.
