125 g butter 250 ml sugar 3 eggs 5 ml vanilla essence 565 ml flour 10 ml baking powder Pinch salt 3ml bicarb 165 ml milk 150g safari fruit cake mix 100g chopped dates 100 g green and red cherries halved 100g chopped pecans 25ml lemon zest 25 ml ginger powder 25 ml cinnamon powder 5 ml mixed spice
Cream butter & sugar. Beat in eggs singly. Add vanilla essence. add in sifted dry ingredients alternately with milk. Fold in prepared fruit. Pour into greased 2 x 22cm loaf pans or a tube pan. Bake In preheated oven at 160°c for 1 ¼ to 1 1 ½ hours.
