INGREDIENTS
¾ cup dark brown sugar1 cup sifted thrice Cake flour plus add in ¼ more..... ⅓ cup vegetable oil2 eggs½ cup buttermilk (should not be runny, if not use double whipping cream) 1 teaspoon orange essence ⅓ cup cocoa powder (use a good brand)¼ cup orange juice ¼ teaspoon of bicarbonate of soda Pinch salt 1 teaspoon baking powder (moirs was used) Grated fresh orange zestFresh Lime zest Chocolate vermicelli Fancy Chocolates for special treat.
METHOD
In a mixing bowl add sugar, veg oil, orange essence and grated orange and lime zest. Mix till sugar dessolved. Add in eggs, cream well. Add in butter milk or if using double whipped cream.
Next Sift all dry ingredients, flour, baking powder, bicarbonate of soda, cocoa and fine salt. Add this to the creamed mixture.Combine mixture and pour into a greased loaf pan.
Bake the chocolate loaf at preheated oven 170 degrees, reduced 5 minutes into baking time to 160 degrees for plus minus 30-35 minutes...test skewer should come out clean. Each oven differs please kindly take note.
Once cooled, ganache the loaf, add chocolate vermicelli, chocolate sauce or as desired. Sprinkle orange and lime zest.
It's a moist cake can be served sliced plain at afternoon tea with the family.
