INGREDIENTS
3 bunch fresh Methi (Fenugreek) herbs Seasonings salt and black pepper2 Tablespoon butter ghee (Clarified butter) 1 teaspoon green masala¼ teaspoon fresh garlic paste1 red onion6 fresh large eggs3 Tablespoon fresh cream¼ cup Mozarelle cheeseChopped fresh dhania (coriander)
METHOD
Prepare fresh Methi (Fenugreek) herbs, wash drain excess water in colender.
Grate cheese, cover, set aside
Crack fresh eggs, beat well, cover set aside
Braise red chopped onions in a small frying pan,use butter ghee (Clarified butter)/oil until sautéed. Lower hear to medium, add green masala,garlic paste followed by Methi (Fenugreek) herbs. Cook for 3-5 minutes , switch off heat, add beaten eggs, sprinkle Seasonings.The heat from the stove top should be enough to cook the eggs Soft and not harden,once butter ghee (Clarified butter) starts to surface remove from heat. Cool, add fresh cream, lightly stir, add grated cheese, chopped dhania (coriander).
Filling now ready to add to samosa pur/leaves.
