I put my onion in pot with ghee (Clarified butter) and oil and all the whole garam masalas braise till onion soft and golden.
I then add my mutton or chicken with ginger garlic, arad (Turmeric) and salt and allow this to cook for a while until meat almost tender.
Thereafter I add my dhana jeeru (cumin) red chillies arad (Turmeric) again green masala which includes coriander,garlic, jeeru (cumin), green chillies......... Braise this for a while.
Then I add liquidized tomatoes. .....let it braise then add your potatoes ......let it braise again for a while then add boiling water and freshly cut dhana
.....I let it boil a bit then add the rice and a spoon full of egg yellow .
I leave it on the stove for 5 minutues then pop it in the oven to steam. ....When it comes out if the oven cut up fresh green dhana.
