Method for banana loaf: Melt butter in a bowl in the microwave. Add sugar, eggs and mashed banana. Mix until well combined. Sift in flour and baking powder. Add melted butter & mix. Dissolve bicarb in milk and add to the flour mixture. Combine well again. Pour mixture into a greased, paper lined loaf tin. Bake at 160 degrees for 50 to 55 minutes. Leave in tin for 5 minutes before turning onto a cooling rack. When cold, ice with lemon icing.
Method for lemon icing: Sift icing sugar into a bowl. Stir in lemon rind and butter. Add sufficient lemon juice to mix to a smooth, spreadable icing.
