INGREDIENTS
1 cup sugarΒ½ lb. butter4 extra large eggs (seperated)3 large ripe bananas (mashed)Β½ cup chopped pecans (+-25)1 teaspoon saltβ
cup castor sugar3 teaspoon baking powder2 cups flourΒ½ cup dessicated coconut
Filling : Caramel TreatIcing : 2 cups icing sugar150g butterΒΌ teaspoon vanilla essence
METHOD
Cream sugar and butter very well together. Add egg yolks , mashed bananas & chopped pecans. Fold in sifted dry ingredients & coconut. Whisk egg whites till stiff & add castor sugar to it. Fold into cake mixture. Spoon mixture into 2 greased round cake tins (22cm diameter) & bake at 180Β° for about 40min.
Cream icing sugar & butter well together. Add vanilla essence & a little hot water to make a creamy consistency. Sandwich the 2 cake layers together with caramel treat & ice the cake. Decorate with chopped pecans.
