Cream sugar and butter very well together. Add egg yolks , mashed bananas & chopped pecans. Fold in sifted dry ingredients & coconut. Whisk egg whites till stiff & add castor sugar to it. Fold into cake mixture. Spoon mixture into 2 greased round cake tins (22cm diameter) & bake at 180° for about 40min. Cream icing sugar & butter well together. Add vanilla essence & a little hot water to make a creamy consistency. Sandwich the 2 cake layers together with caramel treat & ice the cake. Decorate with chopped pecans.
