Ingredients: 250g butter 1 cup brown sugar 2 extra large eggs 1 cup rolled oats 1 cup desiccated coconut 1 cup roasted peanuts 2/3 cup cornflakes (crushed) 1 teaspoon bicarbonate of soda +/-2 cups self raising flour 1 cup cornflakes (crushed for rolling)
Method: 1. Beat butter and sugar. 2. Add eggs and beat in. 3. Add remainder of ingredients, with flour as needed. 4. Roll into balls, then roll in crushed cornflakes. 6. Bake in preheated oven at 160degC for 10min. 7. Leave to cool and crispen.
