INGREDIENTS
Dough :3 cups all purpose flour3 tablespoon coconut oil /ghee (Clarified butter)3 tablespoon yogurt1 teaspoon salt1 ½ teaspoon baking powder± 1 ½ cups boiling water
Filling :6 medium - large potatoes1 teaspoon Salt1 teaspoon Green chillies1 teaspoon jeeru (cumin) ground ¼ teaspoon turmeric Chopped greens ½ cup grated cheese
METHOD
In a bowl combine the flour, oil, yogurt, salt and baking powder. Mix together to resemble crumbs.
Add the water and mix to a soft dough (shouldn't be sticky).
Knead well roll into one big Roti. Smear some ghee (Clarified butter) roll up and divide into 12 balls. Leave to rest 20 minutes.
Roll each ball into Rotis.
Peel and cube potatoes. Boil in salt water until soft. Drain excess water. Add rest of ingredients and mash adjust salt to taste. Lastly add chopped greens and mix in the cheese.
Spread filling evenly over 6 rotis use the remaining 6 to cover. You can use a pastry brush with little water to seal the edges. Fry on hot tawa as you would for rotis.
