-4 large portobello mushrooms
-2 cups of spinach chopped
-½ onion chopped
-1 teaspoon crushed garlic
-½ cup bread crumbs
-¼ cup feta cheese crumbled
-1 tablespoon olive oil
-salt and pepper to taste
-½ cup mozzarella cheese(optional)
1.)Preheat oven to 220degrees.
2.)Carefully remove stems from mushrooms. Place the mushrooms stem side down onto a baking pan. Bake for 10 to 15 minutes until the water leaks out of them.
3.)Remove from the oven and soak up excess water with paper towels. Keep aside.
4.)heat the olive oil over medium heat...Add the chopped onion and garlic and saute for a couple minutes,add the spinach and cook for a couple more minutes.
5.)Add the feta cheese, salt, pepper, cook for a few more minutes.
6.)Stuff the mushrooms with the mixture equally.
Top with breadcrumbs and mozzarella cheese(optional).
7.)Bake for about 10 minutes or until the cheese melts or golden brown.
8.)serve with salad and salad dressing of your choice

A mixture of Chopped plum tomatoes,springonion and sundried tomatoes can be substituted In place of the spinach.
