2kg carrots
3 teaspoon salt
4 tablespoon Methi (Fenugreek) masala
1 teaspoon aradh
3 teaspoon chili powder
1 ½ cups brown sugar
2 cups white vinegar
½ cup maizena (corn flour)
Vagaar:
¼ cup oil
10 curry leaves
2 cloves garlic
3-4 green chilies - slivered
2 tablespoon sesame seeds
2 tablespoon mustard seeds
Peel, wash and dry carrots. Cut into small strips and mix in the salt. Leave to soak for about 3-4 hours. Strain and make sure to dry carrots completely.
Add in your spices.
In a pot add in your sugar, vinegar and maizena (corn flour) and stir till thick. Add this to your carrots and mix.
Lastly make your vagaar and add to carrots and give it a good mix.
U can refrigerate when cool.
