-Potato croquettes(I used frozen but you can make your own with seasoned mash potato dipped in egg and rolled in breadcrumbs). -sweetcorn kernels(tinned or frozen) Salt,chilli powder and lemon juice -mixed salad bag of your choice (I used the bistro mix) -dairylea or feta cheese(I used dairylea this time)
Red pepper Sauce ingredients: -Colemans white sauce or bread sauce packet -sliced red peppers -orange pepper seasoning -salt to taste -butter
1.) bake or fry croquettes leave aside in a warmer Or oven on low heat. 2.)cook sweetcorn with salt,chilli powder and lemon juice and keep aside. 3.)cook sliced red peppers in butter with salt and orange pepper seasoning...make sauce according to packet instructions and add to the cooked peppers (mix). 4.)place salad on a plate,top with the sweet corn and cheese,serve with potato croquettes topped with sauce on the side.
