INGREDIENTS
1 lg baked potato
2 teaspoon butter
salt and pepper
½ tin of shredded tuna drained
4 teaspoon finely cubed cucumber
6 teaspoon sweetcorn
2 teaspoon finely chopped onions
mayonnaise
salt and pepper
grated cheddar cheese
METHOD
cut a + sign on the baked potato and squeeze it
down to open up. mash the potato leaving the skin
intact and add the butter salt and pepper. mix it
in well.
in a bowl add the tuna,sweetcorn,onions salt and
pepper. mix it in well. add enough tuna to make a
spreadabe mixture but not too moist.
pile the tuna mixture on the potato and top with
grated cheese. serve.
you may alternate the tuna for shrimps, or
coleslaw and baked beans. you may leave the
cheese if not preferred . try spinach in white
sauce or cheese sauce as a topping too.
