RECIPE
125 g butter or marg
2 tablespoon oil
+- ¾ cup sugar
1 Large egg
2 teaspoon vanilla essence
2 teaspoon baking powder
¼ cup cocoa
+- less than 2 cups flour
METHOD
Beat butter and sugar well add the egg and vanilla essence
Add baking powder, cocoa,
mix well a food processor
Gradually add the flour
Make a slightly soft dough
Flatten in greased baking tray
Bake for 15-20 minutes at 180*
remove.
Add Topping
Whip up 1 tablespoon apricot jam mixed with 3 tablespoon Nutella or any chocolate spread in a small. Bowl
Smear over the baked dough
Now:
Seperately beat 1 egg with ¼ cup sugar add 2 teaspoon vanilla
Beat well then gradually add
+-1 ¼ cup dessicated coconut to the egg mixture
It must not be too wet
So u can sprinkle over the chocolate spread
It will look peaky..
Sprinkle 100's & 1000's or brown type
Over
Put back in oven bake 15-20 minutes for coconut to change a creamy gold colour.
Leave to cool slightly
Cut in blocks
Keep in air tight container
Enjoy☺
