@Missy - Wa alaykum salam💞, this is what we usually do for holiday- I shared it on this wall a while back.
Yeast doughs- Fully baked and assembled pizza is great, as well as homemade subs, stuffed pita, stuffed buns, aloo paratha. All you have to do is reheat... Even if it gets a bit soggy, it will crisp up in the pan.(Just don't add salad stuff beforehand)
You can make and freeze a few batches of soup- that is easy and rounds the meal off perfectly.
You can also make a few different pasta sauces: chicken Alfredo, simple tomato sauce or a stir fry (Checkers has a lovely range of pre-cut veggies) . You just boil pasta there and mix it in fresh, I haven't had luck freezing the cooked pasta...
Homemade crumbed chicken is lovely, buy a packet of slap chips to fry. Buy the rolls and some salad.
We also love smash burgers, you can prepare the mince balls in advance and freeze. And tacos!
I have frozen rice before, just have to make sure you have a way to really steam it well otherwise it doesn't heat up evenly. Potatoes are a bit dodgy though, I haven't had luck with that.
What also really helps is the sweet snacks- people tend to enjoy biscuits/cakes and a cup of tea just as much as a meal.
All the best 💕
