INGREDIENTS
6 chicken fillets sliced open/butterflied 1 and half teaspoon crushed garlic or garlic flakes2 teaspoon coarse red chillies1 teaspoon fine red chilliessalt to taste as bbq spice and Machachos spice contain salt2 teaspoon bbq spice½ teaspoon white pepper2 tablespoon lemon juice2 tablespoon vinegar2 tablespoon mayo3 to 4 tablespoon Machachos chicken spice either the lemon and herb, mild or hot depending on which you prefer. I use the hot
2 tablespoon ghee (Clarified butter) or oil
METHOD
Marinate chicken with spices for an hour. Mixture must be saucy. Cook in pot till nearly done. Place fillets in oven proof dish. Mix 3 to 4 tablespoon Machachos spice with a little oil or melted butter and add to remaining sauce in pot.bring to a boil and burn out any remaining water. Drizzle over fillets and Grill in oven to brown.Zaakirah

instead of or with red chillies,
2 to 3 tsp peri peri masala can be used,
depending on how hot you prefer your fillets.
It gives a very lovely taste.
The masala is available in the fridges at most butchers and spice shops.
