Trotters portions (has to be boiled until soft before cooking add in cinnamon sticks & ginger to remove odours) 1 onion, sliced 2 tomatoes, grated 1 stem curry leaves 1 tablespoon ginger, crushed 1 tablespoon garlic, crushed 1 & ½ tblspns mixed masala (includes dhania (coriander) powder, turmeric, jeera powder, garam masala, Elachi (cardomom) powder dhania (coriander) (coriander) Salt for taste
Braise onions, curry leaves and ginger & garlic. When slightly browned, add grated tomatoes together with mixed spices. Add trotters portions & salt. Add about 2 cups of water. U can also add ½ cup boiled sugar beans. Lower heat and let it cook until gravy thickens & trotters is very soft. Remove & garnish with dhania (coriander).
