INGREDIENTS
4-5 pieces boneless cod or haddock
60g plain flour
40g corn flour
1 teaspoon baking powder
Pinch of tumeric
Salt and pepper to taste
150ml sparkling water or as needed
Potatoes cut into chips and soaked in cold water
METHOD
Wash and drain the fish. Pat completely dry with a paper towel.Make sure there is no water left. Take a bit of plain flour season with salt and pepper and coat all the pieces of fish. Mix all the dry ingredients for the batter the add the sparkling water bit by bit until you have a good batter not too thin. Heat oil and deep fry fish on high on both sides drain then put in a lined baking tray and bake for 30 minutes on 160'c until crispy
For the chips heat oil and add chips.Lower heat and fry until potatoes are cooked then higher the heat and cook until crispy. Drain then you can put in oven to crisp or leave as they are.enjoy xx
