1⁄4 packet tamarind
1⁄2 cup red chutney (homemade)
1 roll patha
Soak the tamarind in 2 cups boiling water.
Braise onions with a little oil till pink in colour.
Strain in your tamarind water into the onions and then add in your red chutney.
Mix together and leave on low to simmer.
In the meantime cut your patha into slices and then each slice into 4.
Add patha to tamarind mixture and simmer on low for about 15-20 minutues.
Once all the sauce is absorbed into the patha you can mix gently.
Preferably it would be better if you keep the filling in the fridge for a few hours it becomes easier to fill.
Fill into pastry and bake at 180 for about 30-40 minutues.
