INGREDIENTS
6 tortillasGrated cheddar cheese½ green pepper (julienned)1 onion (sliced)2 carrots (grated)1 tomato (julienned)
Guacamole-1 avocado1 tablespoon lime juiceGood pinch salt
Sour cream-125ml sour cream½ teaspoon salt¼ teaspoon sugar1 teaspoon crushed garlic
Strips-500g chicken fillet (cut into strips)½ teaspoon salt½ teaspoon pepper1 teaspoon Mochachos mild spice
Basting Sauce-4 tablespoon Mochachos mild spice4 tablespoon oil2 tablespoon lemon juice
METHOD
1. Steam chicken in salt, pepper & spice till half done.2. Heat basting sauce in a saucepan. 3. Pour sauce over strips and grill in oven till reddened. Leave aside.4. With a drizzle oil, saute pepper, onion, carrot & tomato till just softened. Leave aside.5. Mix sour cream ingredients and smear all over inside of 1 tortilla.6. Dice avocado, toss with lemon & salt, & mash with fork.7. Spoon onto half of tortilla over sour cream.8. Spoon in chicken strips, sauted veg & sprinkle on cheese.9. Close empty half over.10. Fry on hot pan, till crispy on either side. 11. Repeat for others. Place on a cooling rack so does not steam up.12. Cut in half, & serve whilst cheese is melted.
