My Instant styleSweet sour made differently
Wash 6-8 large limes or lemons cut into pieces remove all pitsThen put in pot add water and boil a bit till skin is a bit soft (optional)Drain In a dish add the lime /lemons add +- ½ cup akalwaya pickle masala or any pickle masalaAdd 1 teaspoon rough saltPlace on tray to dry out a bit for couple hours +-2-3 hoursNow add(This is optional : 3 Elachi (cardomom) 3 cloves3 pieces cinnamon sticks)
Make a syrup with 2 cups sugar +- ½ cup vinegar 2 ½ cups water (optional pinch of saffron)Bring to boil till thick Add to the spiced pickle(Optional : add handful of sultanas Or green pepers or green or red whole chillies)
Add wagaar¼ cup oil 1 teaspoon mustard seeds 1 teaspoon whole jeera few curry leaves Slices of few garlic (optional)Little sesame seeds (optional)
Pour hot wagaar over the pickleCool keep for 1-2 days in syrup keep turning the limes /lemonsTill it thickens and you feel it's readyRefrigerate when pickle is doneCan freeze and thaw at room temperature when requiredEnjoy
