INGREDIENTS
125g butter
125ml castor sugar
1 small egg
½ teaspoon baking powder
300ml cake flour
100ml cornflour
1x780g tin pie apples
ground cinnamon (to taste)
brown sugar (to taste)
METHOD
Cream butter & sugar well. Beat in egg. Add sifted dry ingredients & mix to a dough. Press 2/3 of dough into a 23cm pie plate. Spoon in the apples. Sprinkle with cinnamon & sugar. Grate remaining dough over. Bake @180*C for 35-45 minutes, or till golden. Serve with a dollop of whipped cream.
INFO & TIPS
add a little extra flour to dough for easy grating.
