INGREDIENTS
4 eggs
1 cup oil
2 teaspoon bicab soda
100g pecan nuts
1 ¾ cup brown sugar
2 cups cake flour
2 teaspoon cinnamon pwder
4 cups grated carrots.
METHOD
Beat eggs and sugar until very light and creamy. Beat in the oil. Sift flour bicab soda. 1 teaspoon salt together. Stir in the carrots and nuts pour mixture into a greased and lined pan. Bake at 180. 40-50 minutes or until skewer cums out clean. Cool in pan for 15 minutes before removing to a cooling rack. Ice with cream cheese icing and pecan nuts. Cream cheese icing 125g thick cream cheese 80g soft butter1 teaspoon vanilla essence2 cup icing sugar
INFO & TIPS
Combine cream cheese butter in a mixing bowl n beat well.
Add vanila essence and gradually beat in the icing sugar until mixture is thick and fluffy decorate wit pecan nuts.
