1 ¾ c flour2 ½ teaspoon baking powder¼ teaspoon salt1 teaspoon cinnamon¼ teaspoon mixed spice1 c oil 1 ½ c caster sugar3 eggs separated1 c carrots1 c beetroot 1 c nuts

METHOD

Sift dry ingredients Beat egg whites until stiff - keep asideBeat oil and sugar well then add in carrots, beetroot, yolks and nuts Add in dry ingredients and fold in egg whitesBake at 180 for an hour
