Mock Barcelos Chicken Burgers Rec cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:1kg large chicken fillet (sliced in half lengthwise)10-12 burger bunsLettuceSliced tomatoSliced cheeseMiracle whip/ Mayonnaise Marinade- 1 red pepper (roasted)1 red onion (roasted)3 birds-eye red chillies2 tablespoon oil 1 tablespoon white vinegar1 teaspoon salt1 teaspoon paprika 1 teaspoon white pepper 30g butter1 tablespoon garlic paste125ml cup fresh cream 2 tablespoon peri peri sauce2 tablespoon lemon juice Method: 1. Liquidize marinade ingredients till white pepper.2. Heat butter in a pot, add garlic & saute.3. Add liquidized marinade and cook for 5-10min till thickened.4. Add cream, sauce and lemon juice and cook for further 5min.5. Allow to cool completely.6. Place chicken fillet in marinade overnight.7. braai (bbq) on electric griller, basting as cooking till just done.8. Pour remaining marinade into a saucepan and simmer whilst chicken is cooking. 9. Simmer till thickened. This will be extra sauce used in burger. 10. Assemble burgers. Slice bun, spoon on mayo, then layer tomato, lettuce, cheese, fillet, spoon on extra cooked sauce. Close bun & serve.
