INGREDIENTS
4 x Medium sized potatoes 2 x Tablespoon tangy mayonnaise ½ tin cream style sweet corn White viniger A little fresh cream (optional )Salt to taste Black pepper Half a white onion Half green or yellow peppers Sugar or honey (your preference)Spring onion for garnish
METHOD
Cut your potatoes in to cubes Boil your potatoes until soft, strain aund pour in to your bowl. Chop your peppers and Finley slice your onions and add to the potatoes.Add your tin sweetcorn after that
Dressing Add mayo to a bowl and a little fresh cream stir together then add your salt pepper and sugar for sweetness.Add viniger to loosen the mixture
Pour over your potato mixture
The trick with this dressing is to taste it... you need to get that perfect balance.
INFO & TIPS
You can add some green masala for heat if you like hot food. Perfect for braais or as a side dish
