Cube 2-3 medium size potatoes, season with salt, put in a Corningware add some water & microwave until done. Alternatively potatoes can be cooked on stove.
Heat 2 tablespoons oil,add in 1 teaspoon mustard seeds and few curry leaves.
Add above to cooked potatoes.Then add in 1 can of chickpeas.Season with salt, lemon juice,chillie flakes and little turmeric...Fry thinly sliced pur and leave aside
In a bamboo boat spoon filling, top with green chutney & aamli chutney. Season double cream yogurt with salt and put some yogurt over.Top up with lots of fried pur.Sprinkle a little bit of chaat masala.Garnish with fresh coriander and pomegranate seeds.Slightly tweaked by Fatima A Latif
