gajar (carrots) halwa Recipe credit : Nasreen Patel 500g carrots 1 ½ litres milk ½ cup ghee (Clarified butter) ¾ cup sugar 1 cup klim / nespray powder 1 cup fresh cream2 tablespoons Sojee (semolina flour) 4 tablespoons butter½ tin condensed milk½ teaspoon elaichi powder 2 tablespoons ground almonds Pinch of saffron strands
Peel and grate carrots on the fine side of grater and add carrots into a deepish non stick pot. Add in milk and boil on meduim heat till carrots are soft and milk has become halved in quantity.Add in sugar, ghee (Clarified butter), klim and mix till it thickens. Braise butter and Sojee (semolina flour) till slightly pink and add to carrot mixture. Keep mixing halwa to avoid from being scorched. Now add in fresh cream, condensed milk, elaichi powder, almonds and saffron strands (heat for a few seconds in the microwave). Keep mixing halwa mixture till colour darkens and ghee (Clarified butter) comes up from the sides of the pot.
