Loaded Oven Baked Mashed Potato Cakes Recipe & picture by @mosmeen_diaries 400g potatoes, peeled, rinsed and cubed 1 egg1 tablespoons onion, finely chopped2 teaspoons crushed garlic ½ teaspoon garlic salt¼ teaspoon fresh crushed black pepper ¼ teaspoon lemon pepper ¼ teaspoon ground green chillies (more to taste), alternatively use about a tablespoon of pickled jalapeños ½ teaspoon parsley ½ cup grated cheddar cheese 1 tablespoons butter½ tablespoon milk1 tablespoons chives, chopped2 tablespoons breadcrumbs
Method:1. Boil potatoes in salted water until cooked. Once cool, mash and refrigerate until cold. 2. Saute onion until translucent and set aside.3. In a large bowl, combine potatoes, eggs, onions, butter, parsley, cheese and chives. Season with green chillies, salt and pepper to taste. Adjust the texture with a bit of milk if necessary.3. Preheat your oven to 190°C and line a baking sheet with parchment paper.4. On the baking sheet, using a ring mold sprinkle a layer of breadcrumbs, then scoop potato mixture to shape the cakes. Press down slightly with the back of a spatula and finish with another thin layer of breadcrumbs. Remove the ring mold and repeat the process.5. Bake for 20-25 minutes, or until golden.
Serve warm with sour cream
