Whole roast chicken Recipe credit: My late Nani Juliekha HassimPicture credit: @_culinaryinspiration_Recipe adapted by Fatima A Latif Bismillah hir Rahman nir Raheem 1 whole chicken cleaned, washed & drained Mix together in a seperate dish 1 cup sour milk2 teaspoons ginger garlic 1 teaspoon chilli garlic paste (roast masala)1 teaspoon fine red chilli powder1 teaspoon salt1 teaspoon fine cumin powder (jiro)1 teaspoon coriander powder(dhana)½ teaspoon tumeric ¼ teaspoon saffron 2 tablespoons lemon juice1 sachet tomato paste Mix then rub all over chicken. Leave to marinate for an hour. Heat ghee (Clarified butter) in pot and cook till done. Serve with roast potatoes & roti.*I made baby chickens, served with pasta rice & stir fry. Once done add 1 tablespoon freshly ground coriander leaves, 1 tablespoon jalapeño sauce, ½ teaspoon lemon pepper & a sprinkling of Aromat (a South African Spice). Add some finely chopped colored peppers. Steam and serve. Season with lemon pepper and Aromat (a South African Spice). Toss and steam on low.
