Ingredients:4 large chicken fillets1 tablespoon olive oil1 teaspoon salt½ teaspoon pepper½ teaspoon dhana jeeroo powder½ teaspoon ground green chillies1 tablespoon lemon juice1 tablespoon garlic paste4 mozzarella slices1 tomato (sliced)handful of basil (chopped)
Balsamic Reduction-½ cup balsamic vinegar2 tablespoon brown sugar1 teaspoon raw honey
Additional to serve-Cooked tomato onion relish
Method:1. Preheat oven to 200°C.2. Mix together balsamic vinegar, sugar and honey and reduce to half on medium heat. 3. Mix oil, spices, garlic, chillies and lemon juice and rub onto fillets.4. Place chicken in oven proof dish and sit in refrigerator for 15 minutes.5. Bake chicken for 20-30min till no longer pink but still moist. 6. Place mozzarella slices and tomato slices on each chicken fillet.7. Bake.for an additional 5 minutes or until cheese is melting & tomato has softened.8. Top with fresh basil and balsamic reduction.
Note: If this is too dry for you, place in cooked tomato onion relish. Or further add angel hair pasta.
