INGREDIENTS
1 kg chicken mince 2 onions add in food processor and chop fine ( put in cloth and remove all the water ) 1 tablespoon garlic 1 teaspoon ginger 1 teaspoon ground green chili Handful bread crumbs ( not corn flakes ) Half bunch chopped dhania (coriander) Handful spring onions Little chopped mint 1 tablespoon Robertson chicken spice 1 tablespoon gorimas bbq spice 1 tablespoon gorimas sheesh kebab spice 1 teaspoon Aromat (a South African Spice) Salt 1 tablespoon ghee (Clarified butter) / melted coconut oil ( if you eating healthy)
Tzatziki :
¼ finely chopped cucumber ( leave on paper towel to drain water ) Salt 2 tablespoon Lemon juice ( freshly squeezed ) Freshly chopped mint Little olive oil Greek yogurt
Mix together
hummus
1 can chickpea drained and washed Salt to taste Approx ¼ cup extra virgin olive oil 5 cloves fresh garlic 2 ½ tablespoon tahini paste 1 small freshly squeezed lemon
Tahini paste ½ cup sesame seedsOlive oil as required
Add sesame seeds to a pan and roast it in medium. Heat until light brown . Remove from pan . Add to a food processor and grind until crushed and soft start adding olive oil to form a thick paste . METHODIn a food processor add the chickpeas , chipped garlic cloves , salt and 2 tablespoon olive oil , blits until the texture seems smooth , keep on adding olive oil as need to make a thick consistency, lastly add the tahini paste and mix together .
To serve Add olive oil in a plate , using a spoon spread around drizzle olive oil and olives ( optional )
This can be eaten with any middle eastern dish , kebabs etc or even at party's with pita as a dip .

2 big red pepper ( Roast on a gas stove or oven ) remove all the black peels , place in a food processor 3 to 5 garlic cloves 4 tablespoon fresh lemon juice salt ¼ cup pecan nuts handful bread crumbs 2 tablespoon parsley 3 tablespoon olive oil 4 tablespoon pomegranate molasses ( or fresh ) ¼ teaspoon cayenne pepper 1 teaspoon dhana 1 teaspoon jeera
grind everything Adjust the oil
METHOD
Mix everything together with a light hand Make oval or balls and freeze
