Rich and creamy soup packed with chicken, vegetables...
1oz butter1 chicken boneless fillet diced3 tablespoon diced onion¼ cup finely diced carrot2 tablespoon French beans finely diced¼ cup sweet corn2 tablespoon boiled peas (optional) I skipped2 tablespoon diced green pepper 1 tablespoon heaped plain flour
Melt butter in a pot over a med heat ,add chicken stir quickly and cook till it changes its color.
Now add onion saute for a while , add carrot and French beans ,saute for a minutes or 2.
Add flour and 1 chicken cube( stock),give a good stir and gradually whisk in 3 cups of water and 1 cup of milk and bring to boil stirring constantly.
When it comes to boil add in it ½ teaspoon white pepper pd, salt to taste, sweet corn and boiled peas.
Stir every thing well and simmer further for 4-5 minutes...
Garnish with parsley...Serve and enjoy with garlic bread/soup sticks. Fatima Shakir
