INGREDIENTS
Poached Pear Feta Blueberry Salad with Candied Walnuts

Ingredients:3 ripe pears sliced in half (horizontally and peeled)Salad rocket/mixed lettuce leaves Avocado BlueberriesPretzelsFeta cheese (or substitute with cream cheese)Sesame seeds
Poaching liquid-1 liter water/ orange juice¼ - ½ cup sugar2 cardamom pods2 cinnamon sticks1 teaspoon vanilla essence
Candied walnuts-4 tablespoon butter 4 tablespoon brown sugar 2 tablespoon honeyWalnuts
Dressing -2 tablespoon Balasamic vinegar 2 tablespoon Olive oil Salt & Pepper
METHOD
1. Peel the skin off the pears and place in poaching liquid ingredients.2. Allow to simmer for about 40mins till the pears are completely soft but not breaking apart.3. In a pan, add the butter, honey and sugar and once melted, add in the walnuts.4. Stir for 5min to avoid sticking together. Then remove from heat once coated. 5. The remaining poaching liquid from the poached pears should be thickened. If not, boil till reduced.6. Then mix with olive oil, balsamic vinegar and salt+ pepper to make the salad dressing.7. Crush some of the pretzels, then roll marble sized balls of feta or cream cheese into crushed pretzels and sesame seeds.8. Now arrange salad by placing down the salad greens.9. Place down the blueberries and avo and pretzels.10. Then place down poached pear halves (or may slice to arrange).11. Place feta/cream cheese balls in the center of the pears and on salad.12. Place on candied walnuts and serve with dressing on the side. #whenruhanacooks
