Pear Blueberry Rocket Salad
(Serves 2)

Ingredients:1 pear sliced in half (horizontally)Lime juice20g Checkers salad rocketCream cheese (refrigerated)Handful pretzels½ avocado Handful blueberries12 walnuts
Method:1. Lay down rocket, blueberries & chopped walnuts.2. Dice avo & toss in little lime juice.3. Crush pretzels, then Roll marble sized balls of cream cheese in pretzels. 4. Arrange on rocket.5. Core center if pear, rub on some lime juice, place a cream ball in center of pear and place pear on rocket.Alternatively, peel pear, cube, toss in lime juice & arrange on rocket.
