-ready made salad of your choice (I use mixed lettuce leaves OR bistro mix) -cherry tomatoes(cut in half) -cucumber slices -red onion slices -julienne carrots
-aubergine (sliced) *Make a batter with: -chana flour OR plain flour OR self-raising flour - cold water -Salt -pepper
*Optional ingredients: -sourcream -roasted almonds and sesame seeds seasoned with salt and chilli powder
1)First layer :place the ready bought salad leaves and cherry tomatoes,cucumbers,red onions and julienne carrots on a platter.2)Second layer :-dip aubergine slices in batter and fry in med. Hot oil till golden brown, leave to cool then place on top of the salad.3)Third layer (optional) :Top the aubergines with dollops of sourcream.4)Fourth layer (optional) :Sprinkle the roasted almond and sesame mixture.
