Chana flour( besan)-1/12 cupSemolina (sooji)-½ cupGinger/garlic paste -2 teaspoonGreen chilli minced- 2 teaspoonAssafoetida ( hing)-a pinchSalt to tasteSugar- 3 teaspoonPinch of turmericThick sour curd- 1 cupOil-½ cupWater -½ cupLemon juice -2 tablespoon
Mix everything well and make into a very smooth batter.In d mean time keep the pot ready on d stove , filled ½ with water for steaming d dhokla.Grease your pan.Now add eno fruit salt -2 ½ teaspoon to d dhokla mixture, and give it a good stir.Immediately pour d mixture into d pan and steam for 12-15 minutes. Put off d heat ,take out d pan from d steaming pot. Let d dhoklas cool down.Cut into squares , remove from pan and sprinkle d seasonings vaghaar.
For tempering....pop the mustard seeds ,whole green chillies and curry leaves in a couple tablespoon of oil. And finally sprinkle finely chopped coriander leaves.Njoy ..... Fatima Shakir
