Simple style+-2 kg cut up carrots (steamed in ¼ cup vinegar and water) It must still have a bit of crunchDrain coolIn a pot heat+-1 ¼ cups oilLittle mustard seedsFew curry leaves+- 1 tablespoon crushed GarlicLet it splutter a bitAdd all the carrotsMix wellSprinkle in top of the carrots4-5 tablespoon Mazina (Don't make a paste)4-5 tablespoon pickle masala1 tablespoon tumeric1 tablespoon salt (or to Taste)+- 2 tablespoon crushed Red Chilli (can add more)Now add +- ¾ cup sugarCook well like 8-10 minutes on stoveTip:(Can add more vinegar if you wantBut don't let it have that Acidity taste..adjust your salt your crush chilli..sugar can add sesame seeds)Cool Transfer to a plastic TupperwareKeep for 2 days for the spices of Achar to blend in well .Refrigerate Enjoy
